Hi Everyone! Hope you're all having a great weekend. Summer has found us here in Texas and I couldn't be happier about it.
If you're starting to think about the week ahead and wondering what the heck you're going to make for dinner... here are some ideas!
If you don't like Brussels sprouts... try making them with bacon bits and grease like this recipe calls for. What doesn't taste good cooked in bacon?!
Pulled Pork, Mashed Sweet Potatoes and Green Beans
I bake my sweet potatoes in the oven and then remove the skin and mash with butter and salt. I served the pork with pickles, onions and Stubb's BBQ sauce. One night I had green beans and another night I ate cole slaw on the side.
Garden Salad topped with Tuna
It doesn't get much more basic than this! Spring mix or kale, tomatoes, and cucumbers topped with tuna mixed with mayo. I really like the brand pictured below. I buy it at my local Tom Thumb grocery store. It's wild caught and packed with olive oil for lots of healthy fats.
Breakfast: The last few weeks I have been eating one of the following meals:
- Ground beef scrambled with eggs and kale
- Bacon, eggs, and spinach
- Coconut milk
- Whey protein powder
- Coconut oil
- Kale or Spinach
- 1/2 banana
- 1/3 C frozen mixed berries
- Raw almonds
- Hard boiled eggs
After Dinner: 90% Dark Chocolate (a square or 2)
That's the gist of it! This is what works for ME. Hopefully it gives you some ideas of meals for yourself. Sometimes the hardest part of cooking is just deciding WHAT to make! When in doubt, KEEP IT SIMPLE :)
